Meet Sarah
Sarah’s journey into the world of gluten-free cuisine began at the age of 14, during her freshman year of high school. The diagnosis of Celiac Disease, a condition that necessitates a strict gluten-free diet, was met with disbelief and concern. Her immediate reaction was a mixture of confusion and dread: “Isn’t that bread? What am I going to do without bread?” The transition was daunting, with her last gluten-containing meal being chicken strips and fries from Dairy Queen - a nostalgic reminder of what was to be left behind.
Navigating the initial phase of her dietary change proved challenging. The early days were marked by trial and error, as Sarah relied heavily on a limited diet of meat, potatoes, and rice while attempting to identify suitable gluten-free alternatives. Despite her best efforts, frequent illness persisted through high school, a testament to the difficulties of managing Celiac Disease.
In grade 11, Sarah’s passion for baking, honed through cherished experiences with her grandmothers, led her to enroll in a culinary class. This new avenue provided an opportunity to experiment with gluten-free recipes, turning class projects into a personal quest for delicious and safe baked goods. Her culinary journey took a significant turn during grade 12 with a Senior Project that began as a classroom assignment but ignited a deeper exploration into gluten-free baking.
Post-graduation, Sarah pursued formal training in culinary arts, a decision that further solidified her commitment to mastering gluten-free baking. Her culinary studies included a transformative trip to France and Finland, where she experienced the possibilities and delights of gluten-free food and baking. This eye-opening journey confirmed that delectable gluten-free options were indeed attainable.
Following culinary school, Sarah worked at a coffee shop, where she began creating gluten-free offerings for customers. This experience was pivotal, as it exposed her to a growing market of individuals seeking quality gluten-free options. During a Christmas market that year, Sarah recognized the substantial demand and the profound impact her gluten-free creations had on others. Witnessing customers’ joy and, at times, their tears upon discovering tasty, safe options was both rewarding and inspiring.
Sarah’s dedication to gluten-free baking reflects a broader reality: Celiac Disease affects approximately 1 in 100 people, many of whom remain undiagnosed. Through her personal journey and professional endeavours, Sarah has not only embraced her dietary needs but has also transformed them into a powerful source of inspiration and comfort for others navigating similar challenges.
